Another Black Turkey Success

It's Monday morning (2:30 AM), and I'm just recovering and getting the house moving closer to what it was before the party. We had an excellent turn-out (approx 50 people, children and adults included) and two thirty-pound birds were more than enough to feed everyone. I didn't get a chance to spend time with everyone I wanted to spend time with, to the extent to which I wanted to spend time with them, but all in all, I had a very satisfying experience.

For those of you who don't know what the hell I'm talking about, every year my wife and I through a huge holiday party where I subject the guests to a recipe for turkey that requires you to burn the outside (for an astoundingly moist turkey inside). Do a google on 'Black Turkey', and you'll find the recipe. I also have for the last few years added a second traditional bird, brined in apple cider and brown sugar, called 'the Drunken Squab', which we put on the Weber and smoke with apple chips. Both very nice and distinctive flavors.

We now have enough turkey leftovers to feed 30.

The turkey cooked on Black Turkey nights is the best turkey you will ever eat. Period. The most succulent, juicy, thick steaks of turkey ever. I'm not fucking kidding. When was the last time you had a nice thick slab of turkey that tasted like ham? It's totally mindblowing.
